Making bread without a recipe ...
It was bound to happen ... Not feeling up to baking after coming home from Pilates last night, I threw a few ingredients into the mixer and put the dough into the oven before heading out to the school run this morning. Finding upon return that the recipe actually worked. Only if I had taken note. I vaguely remember a few things, but to make sure I will have to recreate this bread.
Just for my own record, it contains sorghum flour, potato starch, ground flax & chia seeds, xantham gum, salt, olive oil, baking powder and water.
I was good at making yeast breads and knew exactly how the dough was suppose to feel like, how long to bake it, etc. I was at a loss trying to make gluten (and everything else) free bread. We are slowly realising that this is a different art. The dough is so very different to work with. On top of this one needs to know the ratios of the different flours and starches to make it work. I think we have cracked it !
