Dairy & gluten free pancakes
As the Easter holidays are coming to an end, I decided to make some pancakes for breakfast. Of the gluten free and dairy free variety.
They turned out lovely.
Below enjoyed by Mimi drizzled with lots of Sweet Freedom.
Recipe (makes 6 small pancakes)
200 gr. Gluten free flour mix
200 ml. Oat milk
1 pot of Organic Baby Fruit *
(I used Hipp Organic Just Fruit Apple & Pear)
1 tsp Pectin **
1/2 tsp Salt
1 Tbsp Rapeseed oil (or any light oil)
1/2 tsp Cinnamon
*) H. is not keen on bananas at all, so we resorted to using a small pot of fruit. Alternatively, you can use a small ripe banana. You may have to add a little more oat milk to get the right batter consistency (add a tablespoon at a time).
**) Pectin in glutenfree baking stops the finished goods from crumbling. Alternatively, you can use 1/2 tsp of xantham gum.
