Gluten Free Flour Mix
Gluten Free Flour Mix 1
This is a feather light gluten free flour mix, which I used in the following recipes:
gluten free white bread
gluten free baguette with teff flour
Ratios:
400 gr. Rice Flour
350 gr. Tapioca Starch
200 gr. Potato Starch
150 gr. Glutinous Rice Flour
Put all the flours in a big bowl and use a whisk to mix them thoroughly. Use what you need for this recipe and store the rest in an airtight container.
Glutinous Rice Flour can be bought in Chinese food stores. Contrary to its name it does not contain gluten.
Gluten Free Flour Mix 2
We have made up our own Gluten Free Flour Mix, which we use in our recipes. Depending on what we are baking we may be adding other flours, but we will specify this in each of the recipes. We have been using cups for ratios, but will post the GF Flour Mix in metric weights soon :)
1 cup Millet flour
2 cups Potato starch (not potato flour)
1 cup Tapioca starch
2 cups Sorghum flour
2 cups Buckwheat flour
We put it all in a big ziploc bag, closed it and mixed it well.
