Waffles
Gluten free, Egg free, Corn free, Rice free, but alas not dairy free.
You will need a waffle iron. We just didn't have the same results trying to cook them on the griddle.
Ingredients:
250 gr. white teff flour *
30 gr. ground flaxseed
2 tsp baking powder
200 ml. goats milk
200 ml. water
1 hipp organic apple & pear fruit pot (alternatively 1 small ripe banana)
1 tsp vanilla essence
1/2 tsp salt
Mix all the dry ingredients.
Mix the wet ingredients, including the fruit (mash banana first, if using a banana)
Combine dry and wet ingredients.
You will end up with thick batter, if it is too runny, add a spoonful of teff flour at a time until you get the right consistency. If it is too thick, add a spoonful of water or milk at a time.
Preheat the waffle iron. Make sure to oil the waffle iron well, as glutenfree dough can be quite sticky. Start making your waffles ! We enjoyed them with some date syrup.
