Chickpea & Quinoa "Meatballs"
Ingredients:
1 Cup cooked chickpeas
1 Cup of chopped mushrooms
1 Cup of cooked quinoa
1 Tbsp of Italian herbs
2 Cloves of crushed garlic
2 Cloves of crushed garlic
Salt & pepper to taste
1 Glug of olive oil and more for the frying pan
Directions:
Put all the all the ingredients in the food processor and mix on medium speed. You want the mixture to have some texture, so don't overmix it. Add salt and pepper to taste.
Heat 2 tablespoons of oil in a frying pan. Oil your hands and take small amounts of the mixture to create medium sized balls. Fry until lightly browned all over.
We enjoyed these over gluten free spaghetti with a tomato, lentil and sweet potato sauce. But, that's for another post !
