Warm Quinoa Salad
Hannah made a quick lunch for us today, a delicious warm quinoa salad. Kidan from Intercultural Cafe Galway made a similar salad for us when we visited him in Galway.
Quite enough for 4 people
Ingredients:
1 1/2 cups of quinoa
3 cups of vegetable stock
1 large carrot
1 medium red onion
1 clove garlic
1 small head of broccoli
1 small tin of sweetcorn
2 Tbsp sunflower seeds
1 glug of light oil (Olive Oil or Rapeseed Oil)
Ground black pepper
Rinse the quinoa before cooking, as there is a bitter coating on the seeds. Put the quinoa and the vegetable stock in a saucepan bring to a boil. As soon as it starts to boil, turn down the heat to a simmer with the lid just ajar, to prevent boiling over. Simmer for about 15-20 minutes. The quinoa goes semi-transparent when it is cooked.
While the quinoa is cooking, prepare the vegetables. Finely dice the onion and garlic and fry in the oil. Grate the carrot and cut the broccoli into very small florets. Add to the onion and garlic mixture and continue to fry for about 8 minutes. Add the cooked quinoa, the sweetcorn and the sunflower seeds and mix it together. Add ground pepper to taste.
Accompanied by some of our griddle breads.
