Freezing kefir grains
What to do with your kefir grains if you have too many, or if you go away on holiday for a nice long spell ? I have frozen kefir grains successfully. Before you pop them in the freezer, rinse them with filtered water (not chlorinated tap water) dab them dry with some kitchen tissue. Take a new sheet of kitchen tissue and place them in the middle, then fold it neatly into a parcel. Put in a small zip loc bag and off to the freezer.
You can resurrect the kefir grains by thawing them out in the fridge, then adding them to a small quantity of milk as normal. It will take 2 batches or so of getting them to make proper kefir again, they will be somewhat out of sorts.
